Our concept
A Rooftop spot with a Mexican pulse and a taste for trouble
CIMA means “peak” in Spanish, and that’s exactly where you’ll find it: high above it all. It's a rooftop where the sunset spills across the sky—and something inside you starts to spark.
This is CIMA Rooftop Bar.
A bar that stirs up new kinds of cravings. For music that slides over your skin. For playful food that surprises. For taptails—crafted by Belgian mixologist Paul Morel— that pour with Mexican soul and a daring twist. Each sip is bright, bold, and just reckless enough to feel like a little secret.
The menu flirts right back. Street food and finger food, done with care and a wink: authentic tacos, plates made to share (or steal). Inside, there’s a sleek bar with its own pulse; outside, a wide terrace opens to the sky, ready for sunsets and stories that last all night.
The terrace at CIMA is all about the view — endless, breath taking, unforgettable. Everything else here simply makes that moment last longer.
And when night falls, the beats roll in and suddenly you’re somewhere else entirely. It feels like Tulum in the dark—warm, electric, impossibly alive—only it’s all happening under Amsterdam’s breath taking sky.
Here, you don’t just watch the sunset, you melt right into it.
